Recipe adapted from Delish Knowledge

Directions

  1. Add all of the lentil Sloppy Joe ingredients into the slow cooker. Mix everything together until well combined.
  2. Cover and cook for 3 1/2 hours on high in your slow cooker.
  3. Check every hour or so, adding more water or broth if necessary.
  4. Make the coleslaw by simply combining all the ingredients in a bowl. Cover and refrigerate.
  5. Once the Sloppy Joes are finished cooking, serve them on whole wheat buns, over a portobello mushroom cap, as filling for a sweet or white potato, or over a mixed green salad (or just in a bowl with a spoon!).
  6. Top with coleslaw.
